I like lemons.
A lot.
There's almost nothing that the addition of even just a little bit of lemon juice or zest can't make taste fresher, and more exuberant!
It's great stuff.
So, it should be included in the annuls of my 'favourites'.
I needed a fair bit of zest for a bunch of different things I was about to make, so I grated a whole lemon's worth.
I ended up using it in everything from some fresh steamed asparagus, to some home made raspberry cupcakes. I even added a pinch to some parmesan crisps, and a touch to some roasted olives.
