Holy Scallions (Batman)!

I love scallions or green onions, and put them in almost every thing I make.  It would be easier to list the things in which I would not include scallions, than those in which I do.  In particular, and in heaviest quantities, I put them in pasta sauces.  I will throw an entire bunch (4-5) in one sauce, if it's large enough.

And this is a relatively recent love.

I remember not liking onions of any sort, as recently as about 7 or 8 years ago.

I was out for supper once, and had an appetizer which was basically bruschetta with a ton of olive oil and green onion.  I kept trying to put my finger on what tasted so good in it and my wife kept saying 'it's the green onion'.

After about three or four times back and forth, I was inclined to believe her.

And then I started to put this crap in everything.

Anyway, at the grocery store, I'm lucky to find some attractive looking organic scallions which are skinnier than my pinky.

Every once in a while at the farmer's market, however... I'll find some awesome scallions:
